Chicken and white bean soup

 
 

Ingredients:

4 cooked, boneless chicken breasts, chopped -OR- 1 rotisserie chicken, shredded

2 Tbsp olive oil

2 onions, chopped

4 cloves garlic, minced

3 14.5-oz cans chicken broth

2 cans green chili peppers, chopped

2 tsp ground cumin

2 tsp dried oregano

½ tsp cayenne pepper

5 cans Great Northern White Beans, NOT drained...

Heat oil in large Dutch oven over medium heat. Add onion and garlic, and sauté for 10 minutes, or until onions are tender.

Add chicken, chicken broth, green chilis, cumin, oregano, and cayenne pepper. Bring to a boil. Reduce heat to low and add beans. Simmer 20‒30 minutes or until heated thoroughly. Pour into bowls and garnish with cheese, sour cream, cilantro, and tortilla strips.
